"A French pin, also known as a straight pin, allows you to cover a large dough surface in just one stroke. Since this pin has no handles and a longer body, I find it gives me the most control and rolls the dough to an exceptionally even thickness. Remember, when rolling out dough, a dusting of flour prevents sticking, but use as little as possible since the dough will incorporate the flour and may not be as tender as a result."
