Spiderweb Sauce with Mozzarella & Zucchini Dippers
Makes 8 zucchini sticks and 16 cheese sticks; Serves 6
Gale's homemade zucchini and mozzarella dippers are just the right size for dipping in a cleverly dressed up marinara sauce. "The spiderweb treatment works well for Halloween parties, too," says Gale.
Ingredients
3 large eggs
1 cup all-purpose flour
2 cups panko (Japanese bread crumbs)
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 zucchini, trimmed and cut into 8 sticks, each 3 inches long and 1/2 inch thick
8 cheese sticks, halved crosswise
Canola oil for frying
1 (16-ounce) jar tomato sauce such as marinara or other smooth sauce
1/2 cup sour cream

Directions

To make the dippers, in a wide, shallow bowl, beat the eggs with a fork until blended. Place the flour in another wide, shallow bowl. In a third wide, shallow bowl, stir together the panko, salt, and pepper. One at a time, dip the zucchini sticks into the eggs, allowing the excess to drip back into the bowl; then into the flour, coating evenly; then back into the egg; and finally into the panko, coating evenly. As each stick is coated, set it aside on a platter. Repeat with the cheese sticks.

Pour the oil to a depth of 1/2 inch into a large skillet and place over medium-high heat. When the oil is hot, add the sticks in batches, being careful not to crowd the pan. Fry, turning as needed, for about 2 minutes, or until golden brown on all sides. Watch them closely, as they brown quickly. Using tongs, transfer to paper towels to drain. Keep warm in a low oven. Repeat with the remaining sticks.

To make the spiderweb sauce, spread a thin layer of the tomato sauce on a large, flat dinner plate, making the sauce as even as possible. Put the sour cream in a plastic squirt bottle, and then draw a spiral on the tomato sauce, starting at the center of the plate. Using a toothpick, and working from the center of the plate outward, create the spokes of the web by lightly drawing the toothpick through the concentric circles of sour cream to the edge of the plate, spacing the spokes at regular intervals.

Serve the warm zucchini and cheese sticks alongside the spiderweb sauce for dipping.
