Prawns in Grappa
Serves 4
Ingredients 20 prawns cleaned and deveined1/8 cup Grappa 1 tablespoon olive oil 1 teaspoon sliced garlic 11/2 tablespoon basil, roughly chopped 3/4 cup cream 20 halved cherry tomatoes 2 tablespoon salsa rossa (see recipe) 1/4 teaspoon salt 1/8 teaspoon pepper |

In a 10 inch saute pan, heat 1 tablespoon olive oil. Add in garlic and cook until slightly golden brown. Sear prawns and add salt, pepper and basil. When prawns are pink deglaze with grappa and reduce 1 minute to cook off alcohol. Add in cream, tomatoes and salsa rossa. Mix well. Let cream reduce for 3-4 minutes. Season with salt and pepper. Serve hot.
